Farfalle al salmone

With the days getting longer and a definite zing in the air, this week Fidget went for an easy, sunny pasta dish. ‘Butterflies’ are the key ingredient – and what better than farfalle to bring summer into the cartoon kitchen.
For the sauce you will need: 100g shredded smoked salmon, 50ml double cream, 20g butter and the juice of ½ lemon.
Start by cooking your pasta (160g, strictly butterflies*). Make the sauce at the same time: in a small pan melt the butter, add the shredded salmon and then the lemon juice. Add the cream and cook gently for 5min or so. Season.
When the pasta is cooked al dente, drain and toss it in the sauce; mix quickly and serve at once.
